Comment les cuisines autochtones contemporaines du Canada expriment-elles leur relation au feu ? Quelle est la signification du feu dans les cuisines autochtones ? Quelle est la valeur symbolique de la fumée, à la fois comme odeur et comme goût, dans les aliments autochtones ? L’analyse se fonde sur deux études : l’une menée auprès d’une communauté des Premières nations au Québec et l’autre axée sur les restaurants autochtones au Canada. La discussion suggère que le feu a un potentiel relationnel et contribue à signifier, à travers la cuisine, le lien entre les peuples autochtones et la terre. | ||

How do contemporary Indigenous cuisines in Canada express their relationship to fire? What is the significance of fire in Indigenous cuisines? What is the symbolic value of smoke, both as a smell and a taste, in Indigenous foods? The analysis is based on two studies: one conducted with a First Nations community in Quebec and another focused on Indigenous restaurants in Canada. The discussion suggests that fire has a relational potential and helps to signify, through cuisine, the connection between Indigenous peoples and the land. | ||
